Are you an experienced kitchen leader who thrives in a quick-paced, event-driven environment?
Mackay Regional Council is looking for an Executive Sous Chef to support the Executive Chef and help lead kitchen operations across MECC, Foodspace and BB Print Stadium.This is a hands‐on leadership role where you'll mentor teams, maintain high food standards and ensure seamless delivery for a wide range of functions and events.As Executive Sous Chef, you will be responsible for the day-to-day operation of the kitchen, including:Supporting the Executive Chef with overall kitchen managementSupervising, training and mentoring kitchen staffOverseeing food preparation, production and presentation for eventsManaging rosters, stock control, portion control and cost efficiencyEnsuring compliance with HACCP, food safety and hygiene standardsMaintaining safe work practices and use of kitchen equipmentContributing to operational policies, procedures and sustainability initiativesThis role involves after‐hours and on‐call work in line with event requirements.About YouTo be successful, you will have:Certificate III in Commercial CookeryResponsible Service of Alcohol (RSA) certificationMinimum 5 years proven experience leading and supervising commercial kitchen teamsExperience in food and beverage preparation for functions and eventsStrong cost control and organisational skillsSound knowledge of food safety legislation and WH&SAbility; to work under pressure while maintaining professionalismBroad knowledge of cuisine and cooking techniquesQLD C Class Driver Licence (or interstate equivalent)First Aid and/or Warden accreditation (or ability to obtain)Experience with hospitality systems such as EBMS or Cooking the BooksKnowledge of event operations and waste reduction practicesWhy Join Us?
