Swillhouse is seeking a Venue Manager who will take ownership of the day-to-day running of the venue; leading the floor, shaping service standards and ensuring the team delivers a consistent and memorable guest experience.

About Swillhouse

Swillhouse is an independent hospitality group creating venues with distinct identities and lasting relevance. Across restaurants, bars and late-night music rooms, each space is shaped by craft, atmosphere and a deep attention to detail.

Our venues are only as strong as the people behind them. We care about how the work is done — leadership that’s present, standards that matter, and teams who take pride in their role and the experience they deliver every day.

About the Role

Reporting directly to the General Manager, you take ownership of the day-to-day running of the venue — leading the floor, shaping service standards, and ensuring the team delivers a consistent and memorable guest experience.

As a Venue Manager, you’ll balance exceptional hospitality with commercial performance, creating an environment where both guests and team members thrive.

Your responsibilities will include:

- Leading floor operations during service, setting the tone and pace of the venue
- Acting as the senior operational leader on shift, ensuring smooth, confident service delivery
- Upholding and continually improving service standards to deliver exceptional guest experiences
- Managing rosters, labour planning and daily staffing decisions to balance service excellence with commercial outcomes
- Coaching, mentoring and developing supervisors and front-of-house team members

- Working closely with the General Manager to drive operational performance, financial results and team culture
- Building strong relationships with guests and creating memorable hospitality experiences
- Ensuring compliance with company policies, food safety, licensing and WHS requirements

About You

You’re an experienced hospitality leader who leads from the floor, enjoys developing people and takes pride in delivering consistently great service.

You’ll bring:

- Experience as a Venue Manager, Assistant Venue Manager or Restaurant Manager in a premium hospitality environment
- A solid understanding of restaurant operations, service flow and guest experience
- Confidence leading high-performing teams through fast-paced services while remaining calm and decisive
- The ability to coach, mentor and develop emerging leaders
- Strong commercial awareness, including rostering, labour management and cost control
- Excellent communication and organisational skills
- A genuine appreciation for quality hospitality and creating memorable guest experiences

Why Join Us

- Be part of a high-performing hospitality group where venues have distinct identities
- Ongoing learning through regular venue trainings, masterclasses and group-wide development sessions
- A strong commitment to physical and psychological safety, with clear pathways to speak up and be supported
- Access to 24/7 confidential wellbeing support through Sonder, including mental health, medical and safety services
- Generous staff discounts across Swillhouse venues for all team members
- Access to lifestyle and wellbeing partnerships, including fitness, recovery, and workwear discounts
