Are you a qualified Chef and experienced hospitality leader who is passionate about creating exceptional dining experiences for older Australians?

At Mercy Community, we believe food is one of the most important parts of a resident’s day. We are looking for an experienced Hotel Services Manager to lead our hospitality services at Nudgee Aged Care, ensuring residents receive high-quality, nutritious meals and an outstanding dining experience every day.

This is more than a management role. We are seeking a leader who enjoys being involved in kitchen operations, mentoring teams and driving continuous improvement across catering, cleaning and laundry services.

About the Role

As the Hotel Services Manager, you will lead all hospitality services across our residential aged care home, including catering, cleaning and laundry services.

You will be responsible for:

Hospitality and Kitchen Leadership

- Leading the operational performance of all hospitality services.
- Providing hands‑on leadership within kitchen operations and food production.
- Participating in food preparation and cooking when required.
- Ensuring high‑quality meal service and resident dining experiences.
- Managing food ordering, stock control and supplier relationships.
- Monitoring food quality, presentation and food safety practices.

Menu Planning and Resident Experience

- Designing, implementing and reviewing seasonal menus.
- Working with residents,



clinical teams and allied health professionals to ensure menus meet nutritional and dietary requirements.
- Leading Resident Food Focus Meetings.
- Using resident feedback to continuously improve food and dining services.
- Promoting resident choice, dignity and enjoyment through quality dining experiences.

Team Leadership and Workforce Management

- Leading, coaching and developing hospitality teams.
- Managing staffing rosters across catering, cleaning and laundry services.
- Monitoring labour costs and workforce productivity.
- Supporting recruitment, onboarding and staff development.
- Building a positive, customer‑focused culture aligned with Mercy Community values.

Quality, Compliance and Governance

- Ensuring accreditation standards are achieved and maintained.
- Leading compliance with the Aged Care Quality Standards, particularly Standard 6 – Food and Nutrition.
- Maintaining HACCP and food safety compliance.
- Monitoring hospitality audits, resident feedback and quality indicators.
- Implementing continuous improvement initiatives across hospitality services.

Financial and Operational Management

- Managing budgets, purchasing and labour costs.




- Establishing and monitoring hospitality KPIs.
- Identifying operational efficiencies while maintaining service quality.
- Supporting sustainable service delivery and resource management.

About You

To be successful in this role you will have:

- Certificate III in Commercial Cookery or equivalent Trade Chef qualification.
- Current Food Safety Supervisor certification.
- HACCP training and experience.
- Previous experience managing hospitality or food service operations.
- Experience leading commercial kitchen operations.
- Experience developing and implementing menus.
- Experience managing rosters and labour budgets.
- Strong leadership and people management skills.
- Knowledge of the Aged Care Quality Standards, particularly Standard 6 – Food and Nutrition.

Highly Desirable

- Experience within residential aged care.
- Experience leading large hospitality teams.
- Knowledge of texture‑modified diets and aged care nutrition requirements.
- Experience facilitating resident consultation forums and customer feedback meetings.
