The Role

We are seeking an experienced and motivated Casual Chef to join our award-winning team, with the opportunity to transition to a part-time position within six months.

A minimum commitment of 3–4 shifts per week is required; however, full-time hours are available immediately for the right candidate.

This position is based at the Diplomat Bar & Grill, located within Ramada by Wyndham Diplomat Canberra.

The Role

About You

You are a passionate and creative chef with proven experience in a busy, high-standard kitchen. You take pride in delivering consistent quality, thrive under pressure, and bring positive energy to the team.

You should be able to:

- Work efficiently both independently and collaboratively within a team.

- Maintain a high level of attention to detail, presentation, and food safety.

- Demonstrate strong time management and adaptability in a energetic environment.

- Communicate effectively with both kitchen and front-of-house teams.

Key Responsibilities

Food Preparation & Service

- Prepare and cook menu items according to recipes and presentation standards.

- Ensure dishes are of consistent high quality, aligned with brand expectations.

- Execute service for a la carte dining, functions, and events.

- Maintain mise en place and readiness for service at all times.

Specific Responsibilities





- Oversee a specific kitchen section (grill, larder, or sauté) ensuring timely, quality production.

- Contribute to menu development and seasonal changes by suggesting creative dishes.

- Assist with stock control — including ordering, rotation, and waste minimisation.

- Ensure all food safety, hygiene, and HACCP standards are met and maintained.

- Collaborate with the Head Chef and Sous Chef to ensure smooth kitchen operations.

Kitchen Maintenance

- Maintain cleanliness, organisation, and equipment care in accordance with safety standards.

- Report maintenance issues promptly and follow up as required.

Qualifications & Experience

- Certificate III in Commercial Cookery (or equivalent qualification).

- Previous line cook experience in a fast-paced, quality-driven kitchen.

- Strong understanding of modern Australian cuisine and plating techniques.

- Creativity and initiative to contribute to menu development.

- Strong communication and leadership skills.

- Flexibility to work various shifts, including evenings and weekends.
