New South Wales

Swillhouse is seeking a Sommelier to help deliver thoughtful and confident wine service across its restaurant portfolio. This role is ideal for a hospitality professional with strong wine knowledge, a passion for guest experience, and a genuine interest in sharing, developing and continually expanding their expertise.

Swillhouse is an independent hospitality group creating venues with distinct identities and lasting relevance. Across restaurants, bars and late-night music rooms, each space is shaped by craft, atmosphere and a deep attention to detail.

Our venues are only as strong as the people behind them. We care about how the work is done — leadership that’s present, standards that matter, and teams who take pride in their role and the experience they deliver every day.

About the Role

You’ll play a key role in delivering a thoughtful and confident wine experience on the floor. Working closely with restaurant leadership teams, you’ll help guide guests through the wine list, support service standards, and contribute to the overall rhythm and flow of the venue.

Your responsibilities will include:

- Delivering informed, approachable and confident wine service throughout service
- Guiding guests through the wine list and supporting thoughtful food and wine pairings
- Supporting daily cellar organisation, stock rotation and wine presentation standards
- Assisting with team wine training and helping build product knowledge across the floor team

- Collaborating with managers, chefs and the wider floor team to ensure a seamless guest experience

About You

You’re passionate about hospitality, wine and guest experience, with a genuine interest in creating memorable moments on the floor.

- Experience in a Sommelier, Junior Sommelier or senior floor role within a quality restaurant environment
- Strong wine knowledge across classic and emerging regions, producers and styles
- WSET certification or equivalent wine studies highly regarded
- Confident and personable communication style with guests and team members alike
- A genuine interest in continuing to learn and develop your wine knowledge
- Strong attention to detail and pride in service standards
- Appreciation for classic hospitality and the culture of a great restaurant

- Access to 24/7 confidential wellbeing support through Sonder, including mental health, medical and safety services
