Mercure Gerringong Resort is a well-established 52-room resort located on the beautiful NSW South Coast. We are looking for an energetic, commercially minded and hands‑on Hotel Operations Manager – Sales, Events & Guest Experience to join our leadership team.
Reporting directly to the General Manager, this is a key leadership opportunity for someone who enjoys developing new business, building client relationships, delivering successful conferences and events, and contributing to the daily success of a busy resort.
About the Role
This is a diverse leadership role with a strong commercial focus. Your primary objective will be to grow accommodation, conference, event and Food & Beverage revenue while helping deliver outstanding guest experiences.

Unlike a traditional office-based sales role, this position is based primarily within our Front Office environment. This allows you to remain closely connected with guests, reservations, group movements and the daily operation of the hotel.
Working closely with the General Manager, you will support the Front Office team with day-to-day operational matters, reservations and guest service when required. While you will play an significant operational role,
your principal focus will remain on business development, sales growth and event delivery.
Key Responsibilities
Business Development, Sales & Events (Primary Focus)
- Proactively identify, develop and secure new accommodation, conference and event business.
- Build strong relationships with corporate clients, local businesses, community organisations and government groups.
- Re‑engage dormant accounts and develop new business opportunities.
- Conduct proactive sales calls, client meetings and hotel site inspections.
- Prepare proposals, quotations and event agreements.
- Convert enquiries into confirmed business.
- Coordinate conferences, meetings, weddings, functions and group accommodation from enquiry through to completion.
- Conduct post-event follow-up to encourage repeat business and strengthen client relationships.
Food & Beverage Performance
Working alongside the Restaurant Manager and Kitchen team, you will:
- Support the continued growth of Bella Char Restaurant & Wine Bar.
- Develop promotions, accommodation packages and event catering opportunities.
- Identify opportunities to improve revenue, service standards and guest satisfaction.
- Assist with conferences, weddings and major functions when required.
Front Office Operations & Guest Experience
Operating primarily from the Front Office, you will:
- Support reservations and accommodation enquiries.
- Assist with guest arrivals, departures and group movements during key operational periods.
- Work confidently with hotel Property Management Systems (PMS).
- Provide day-to-day support and guidance to the Front Office team.
- Assist with operational decisions within agreed responsibilities.
- Help deliver a seamless and memorable guest experience.
About You
You are a proactive hospitality professional who enjoys balancing commercial success with operational excellence.
Ideally you will have:
- Minimum three years' experience within the hotel or hospitality industry.
- Previous supervisory or management experience.
- Strong experience in hotel sales, business development, conferences or events.
- Good understanding of Food & Beverage operations.
- Front Office, reservations or accommodation experience.
- Strong communication, organisation and relationship-building skills.
- A commercially focused and results-driven approach.
- Experience using hotel Property Management Systems (PMS).
- Full Australian working rights.
Experience within a 4-star hotel or resort environment, Accor Hotels, and knowledge of Protel PMS or Opera Cloud will be highly regarded.
