We require a Chef de Partie to join our team in Tweed Heads West.

About The Role:

Working with the Head Chef, the Chef de Partie will be an integral part of the kitchen team. We are aiming high and want you to as well. Collectively working together, the 'Chef team' will be able to instil ideas and innovation into the entire kitchen team as we strive to deliver food on a level that consistently surpasses the expectations of all those who dine with us.

Our food is us on a plate - sustainable modern Australian with a coastal twist. We celebrate what's best right now and in season, like fresh produce sourced from local markets, and whole fish and quality meat from suppliers up and down the coast.

The club has evolved into a energetic and innovative centre for dining,



entertainment, recreation and events. It's become a home away from home for our members, and a cornerstone for the region.

Joining Seagulls Tweed Heads means you are part of Norths Collective which includes Norths Cammeray, The Greens North Sydney, The Alcott Lane Cove, The Verandah Beecroft, and The Bowlo Bangalow as well as 2 fitness centres, Norths Fitness at Norths Cammeray and Revs Health & Fitness at Seagulls Tweed Heads.

Tasks include:

- Overseeing the preparation, cooking and presentation of food.
- Assisting the Head Chef and Sous Chef where required.
- Financial performance by maintaining proper portion and stock control to keep food costs down.
- Creating tasting menus notes to provide to floor staff when changing the menu.
- Maintaining clean and orderly workspaces.
- Hygiene and food safety of the highest level in accordance with food safety guidelines and Club policies and procedures.
- Actively driving and supporting a range of Work, Health and Safety Compliance activities.
- Directing and supporting those in your team.
- Training of junior kitchen team members demonstrated through policies and procedures and all training courses offered by Norths Collective.
- Maintain effective communication with all key stakeholders.

To be considered you will need a level of skill commensurate with an AQF Associate Degree, Advanced Diploma or Diploma and 2 years of related employment experience OR at least three years of relevant experience may substitute for the formal qualifications listed above.

This is a full time position, an immediate start is available. A remuneration package of $80,000 - $90,000 per annum will be offered to the successful candidate.
