About the Role

You will play a key role in leading a professional andguest-focused team, where exceptional service, operationalexcellence and creating memorable dining experiences are at theheart of everything we do. As a RestaurantManager, you will oversee operation of Marcel Bar& Bistro, In Room Dining & Tori Café, inspire and supportyour team, and ensure every guest interaction reflects ourcommitment to outstanding service.

The Role of Restaurant Manager

- Oversee the day-to-day operations of the hotel's food &beverage; outlets, ensuring seamless service delivery, operationalefficiency,



and exceptional guest experiences
- Collaborate with the Executive Chef and General Manager todrive the strategic direction, profitability, and continued successof the food and beverage operation
- Monitor and optimise labour, productivity and operationalperformance to achieve business objectives and financialtargets
- Build and maintain strong relationships with internal andexternal stakeholders to enhance brand awareness and drive revenuegrowth
- Champion service excellence by creating personalised andmemorable dining experiences for every guest
- Identify opportunities to improve operational processes,service standards, and overall business performance
- Ensure compliance with company policies, food safetyrequirements, and health and safety legislation
- Support the achievement of financial targets through effectivecost control, revenue optimisation and strong operationalleadership

Setting you up for Success

- Previous experience as a Restaurant & BarManager or Senior Food & BeverageSupervisor, with leadership experience in a fast-pacedhospitality environment
- Robust commercial and financial acumen, with experience drivingrevenue growth while effectively managing labour and operatingcosts
- Sound knowledge of rostering and workforce planning
- A passion for delivering exceptional guest experiences andmaintaining outstanding service standards
- Strong knowledge of wines, cocktails and contemporary food andbeverage operations
- Sound understanding of food safety, Work Health & Safety (WHS),and Responsible Service of Alcohol (RSA) requirements
- Experience using POS systems and rostering software
- A current Responsible Service of Alcohol (RSA)is essential
- Current First Aid Certificate, or willingness to obtain one(desirable)
