Sully's Rooftop offers a modern Australian dining experience with a relaxed coastal edge, and we're now looking for an exceptional restaurant Manager.

The Role

We're looking for a dynamic and experienced Restaurant Manager to lead our floor and service operations at Sully's Rooftop. You'll be the heartbeat of the guest experience - overseeing daily service, developing and mentoring your team, and ensuring every cover is delivered to the highest standard.

This is a hands-on leadership role where your presence, energy, and attention to detail will set the tone for the entire venue.

What We're Looking For

- Proven experience as a Restaurant Manager or Senior Supervisor in a premium or high-volume venue
- Solid leadership skills with the ability to inspire and develop a diverse team
- Excellent communication and interpersonal skills - with guests and staff alike
- Solid understanding of floor and bar operations, including upselling and service rhythm
- Confident with reservations systems, rostering, and operational admin
- A genuine passion for hospitality and creating memorable guest experiences
- Flexibility to work evenings, weekends, and public holidays as required

What You'll be Doing

eading and motivating the floor team to deliver outstanding, guest-first service

- Overseeing daily restaurant and rooftop bar operations from pre-service setup to close
- Developing and implementing staff training programs, onboarding, and ongoing coaching




- Managing reservations, floor plans, and guest flow to maximise covers and experience
- Handling guest feedback and complaints with professionalism and care (we use the ACE model)
- Collaborating closely with bar management and kitchen on service standards and consistency
- Monitoring KPIs, labour costs, and shift performance in line with venue targets
- Driving a culture of accountability, positivity, and continuous improvement
- Ensuring compliance with RSA, food safety, and all relevant legislation
