Restaurant Manager – Cooly Breeze Rooftop Restaurant & Bar

Cooly Breeze Rooftop Restaurant & Bar is an award-winning Mediterranean restaurant located on the rooftop of the Beachcomber International Resort in the heart of Coolangatta. With breathtaking ocean views, exceptional food, handcrafted cocktails, and genuine hospitality, we're looking for a passionate Venue Manager to lead our team and continue delivering outstanding guest experiences.

About the Role

As our Venue Manager, you will oversee the daily operations of the venue, lead and inspire the front-of-house team, and work closely with the owners and kitchen team to ensure smooth service and continued business growth.

Key Responsibilities

- Lead, mentor and develop the front-of-house team.
- Oversee all day-to-day venue operations.
- Deliver exceptional customer service and resolve guest concerns professionally.
- Manage staff rosters and labour costs.
- Recruit, train and onboard new team members.
- Maintain high service standards and team performance.
- Work closely with the Head Chef to ensure seamless service.
- Monitor stock levels, ordering and inventory control.
- Ensure compliance with food safety, liquor licensing and workplace health & safety requirements.
- Drive sales,



increase customer satisfaction and identify opportunities for business growth.
- Assist with marketing initiatives, events and promotional campaigns.
- Prepare reports and manage venue performance against budgets and KPIs.

About You

- Minimum 3 years' experience in a Venue Manager or Restaurant Manager role.
- Strong leadership and team management skills.
- Excellent communication and organisational abilities.
- Ability to remain calm under pressure and lead during busy services.
- Sound understanding of hospitality financials including labour and cost control.
- Current RSA certificate (QLD).
- Approved Manager licence (or willingness to obtain).
- Experience with reservation systems and POS software.
- Full Australian working rights.
- Some wine knowledge is a plus
