An exceptional opportunity to secure a senior leadership role with a qualified organisation in Perth's East End. This dual-focused position combines restaurant and beverage program management. This position is ideal for an experienced hospitality leader ready to run the floor and the cellar with equal authority.

The successful applicant will have significant restaurant and beverage/sommelier management experience, be able to deliver genuine hospitality, coach and mentor the team, drive wine list development and beverage cost control, and report confidently to senior managers and consultants while managing the venue's service, administrative and financial performance.
/n
Strong leadership is required at this level, backed by a deep and current knowledge of wine and beverage, a refined palate, and the motivation to drive constant service perfection while meeting key performance indicators. A key requirement is the ability to make guests feel truly welcomed and appreciated with authentic character.

About the venue

Garum is situated in the magnificent historical Hibernian Hall at the foot of The Westin Hotel, located at the East end of the Perth CBD.
/n
Reflecting the rich history of the space, the venue focuses on its Roman connection – Roman techniques and traditions take centre stage on the menu. Uncomplicated and pure are the cornerstones of the kitchen philosophy, delivering local ingredients with a unique Roman flavour.

Job Description
/n
You will be responsible for a large team of service staff and sommeliers, leading the preparation and delivery of exceptional food, wine and customer service. This includes maintaining an outstanding, competitive wine list, managing beverage stock, costs and supplier relationships, and keeping the team's product knowledge sharp through ongoing training and mentoring.
You will drive guest experience, uphold the restaurant's brand and culture, manage administrative and financial performance against KPIs, and work closely with senior management and consultants on team leadership and product development. You will ensure seamless communication and cohesion between front and back of house so that every element of food, beverage and service is delivered to the highest standard.
