Title: Commis Chef – Patina at Customs House

Location: Brisbane City, Customs House

Type: Full‑time, Fixed‑term

Salary: $72,669 plus 17% super

Responsibilities

- Produce high‑quality à la carte and function food for Patina at Customs House, including in‑house events and external catering.
- Maintain consistently high standards of food quality, presentation, and service delivery.
- Support training and supervision of kitchen hands as required.
- Use kitchen equipment safely, responsibly, and in accordance with workplace procedures.
- Monitor and record fridge, cold‑room, and incoming stock temperatures as required.
- Communicate stock requirements and issues to the chef in charge.
- Adhere to all food safety, hygiene, and Food Safety Plan requirements.

Qualifications

- Completion of an apprenticeship in cookery.
- Minimum two years’ experience as a Commis Chef in a similar establishment.
- Good knowledge of à la carte and banquet food production.
- Understanding of kitchen operations, food safety, and WHS requirements.
- Well‑developed organisational, communication, and interpersonal skills.
- Positive, professional attitude and commitment to high standards.
