Bistro / Restaurant Manager – Immediate Start

Nepean Rowing Club is seeking an experienced and hands-on Bistro / Restaurant Manager to lead the daily operations of our busy club dining venue. This is a senior operational role responsible for driving service standards, team performance, financial outcomes, and overall guest experience.
This position suits a strong hospitality leader from a club, pub, or high-volume restaurant background who understands both service delivery and commercial performance.

About the Role
The Bistro Manager is responsible for the end-to-end management of the restaurant operation. You will oversee floor service, lead and develop the front-of-house team, manage rostering and labour costs, and work closely with the kitchen and senior club management to ensure a seamless and profitable operation.
This is not a desk-based role — we are looking for a visible, hands-on leader who sets the tone during service and builds a strong culture within the team.
Key ResponsibilitiesOperational Management
- Oversee all daily bistro operations, ensuring smooth and efficient service
- Lead from the floor during peak periods
- Ensure consistent delivery of food and beverage service standards
- Monitor service flow, ticket times, and customer satisfaction
- Implement and maintain SOPs across all service areas
Team Leadership & Development
- Recruit, onboard and train front-of-house staff
- Create and manage weekly rosters in line with budgeted labour targets
- Conduct performance reviews and ongoing coaching
- Drive team morale, accountability and service culture
- Ensure compliance with RSA, RCG and responsible service standards
Financial & Commercial Performance
- Manage labour cost percentages and wage budgets
- Oversee stock control, ordering and supplier coordination
- Monitor food & beverage KPIs including:
- Sales growth
- Average spend per head
- Labour vs revenue ratios
- Stock variances
- Identify opportunities to increase revenue through promotions and upselling initiatives
Customer Experience
- Maintain strong floor presence and customer engagement
- Handle escalated customer feedback and complaints professionally
- Ensure venue presentation, cleanliness and ambience standards are upheld
- Work with marketing and club management to execute events and promotions
Compliance & Systems
- Maintain WHS standards across FOH operations
- Work within club policies and reporting structures
- Assist with reporting to senior management on performance metrics
About You
You are a confident and capable hospitality professional who thrives in high-volume environments and understands the balance between service excellence and commercial outcomes.
You will ideally bring:
- 3+ years’ experience as a Restaurant, Bistro, or Venue Manager
- Experience within clubs, RSLs, pubs, or high-volume hospitality venues
- Strong financial understanding of labour and cost control
- Proven leadership experience managing teams of 15–30 staff
- Excellent conflict resolution and problem-solving ability
- High level of organisation and attention to detail
- Current RSA (NSW)

Pay: $80,000.00 – $85,000.00 per year
