We’re looking for an experienced and motivated Full Time Commis Chef to join the team at Highways in Springvale. If you’re all about good food, good people and a bit of controlled chaos â we’d like to hear from you.

You’ll work with a solid kitchen team who know how to get the job done, back each other, and still have a laugh when things get hectic. From prep to pass, it’s hands-on, fast-paced and never boring.

Highways is located in the hub of suburban south-east Melbourne on the perimeter of Sportsbet Sandown Racecourse.

Featuring a family friendly bistro with a designated kids play area, great service and a relaxed atmosphere making it the perfect dining experiences for all to enjoy. Along with an extensive up-to-date menu with daily specials, Highways caters to both children and adults alike.

About Us

Pegasus Leisure Group (PLG) is the hospitality arm of the Melbourne Racing Club, managing a growing network of 17 pubs, clubs and hospitality venues across Victoria. Our venues include bistros, sports bars, function spaces and gaming areas, each focused on delivering great hospitality experiences within their local communities.

What You’ll Be Doing In The Kitchen

- Cooking and prepping menu items to our high-quality standards
- Jumping in to support senior chefs with prep, plating and service when things get busy
- Keeping food safety and hygiene locked in at all times (non-negotiable)




- Running your section during service and keeping things moving on the pass
- Keeping your station clean, organised and ready for the next wave of tickets

What We’re Looking For

- Cert III or IV in Commercial Cookery (or equivalent experience in the real world)
- Food Allergens and Do Food Safely Certificate
- Experience in a busy pub, bistro or high-volume kitchen
- Solid understanding of basic cooking methods and how to execute a recipe properly
- Willingness to work a rotating roster including nights, weekends and public holidays
