Lizards Bar & Restaurant (owned by JH Group) is Darwin’s ultimate central hub for premier dining, sports, and live entertainment. Located on the corner of Mitchell & Daly Street, we offer a fast-paced, high-energy workplace right in the heart of the Darwin CBD in the Northern Territory, Australia. We are seeking a proven and experienced Restaurant Manager to spearhead our team and successfully manage our daily operations.
Position Summary The Restaurant Manager is responsible for planning, organising and overseeing the daily operations of a hospitality venue comprising a restaurant, bar and bottleshop. The position is responsible for ensuring efficient venue operations, maintaining customer service standards, managing staff performance, controlling inventory and operating costs, and ensuring compliance with all relevant legislative and company requirements.
The role has direct responsibility for supervising approximately 40–50 employees and managing the operational performance of the venue on a day-to-day basis. Key Responsibilities Venue Operations
Open and prepare the venue for daily trading and ensure all operational areas are ready for service. Coordinate and oversee the day-to-day operations of the restaurant, bar and bottleshop. Monitor service standards and ensure customers receive a high-quality dining and hospitality experience.
Ensure efficient operation of all departments and address operational issues as they arise. Maintain venue presentation, cleanliness and operational standards.

Prepare and manage staff rosters in accordance with business needs and labour budgets. Supervise and lead a team of approximately 40–50 employees. Deliver induction training and ongoing staff development.
Monitor staff performance and provide coaching and guidance to improve productivity and service standards. Ensure staff comply with company policies, procedures and workplace requirements. Inventory and Purchasing
Manage ordering and procurement of food, beverage and retail stock. Maintain appropriate stock levels to support venue operations. Liaise with suppliers regarding product orders, deliveries and supply requirements.
Conduct regular stocktakes and inventory checks. Monitor stock movement and investigate stock discrepancies. Implement stock control procedures to minimise wastage and loss.
Financial Administration Assist in preparing and monitoring operational budgets. Monitor labour costs and roster efficiency to achieve budget targets.
Process and review supplier invoices for accuracy and payment. Complete daily banking and cash reconciliation procedures. Manage venue cash floats and ensure cash handling procedures are followed.
Review and approve employee timesheets for payroll processing. Monitor operational expenses and identify opportunities to improve cost efficiency. Customer Service
Handle customer enquiries and resolve complaints in a professional and timely manner. Monitor customer feedback and implement improvements where appropriate. Promote a customer-focused culture throughout the venue.
Compliance and Safety Ensure compliance with food safety requirements and venue operating procedures. Ensure compliance with liquor licensing laws and responsible service requirements.
Monitor workplace health and safety practices and maintain a safe working environment. Maintain operational records and documentation as required. Skills and Experience
Demonstrated experience in a hospitality management role within a restaurant, pub, bar or similar venue. Proven ability to supervise and manage large hospitality teams. Experience in recruitment, rostering, staff training and performance management.
Strong inventory management and stock control experience. Experience managing operational budgets and costs. Sound understanding of food safety, liquor licensing and workplace health and safety requirements.
