Mures Lower Deck is recruiting experienced and highly capable Restaurant Managers and Duty Managers to join our leadership team and support the continued evolution of one of Hobart’s most iconic waterfront dining venues.

Lower Deck is a fast-paced, high-volume hospitality business that provides an outstanding opportunity to develop genuine operational management skills.

Our leaders gain hands-on experience managing large teams, busy services, labour, stock, financial performance and the day-to-day challenges that come with running a successful high-volume venue.

About the Role

As a Restaurant Manager or Duty Manager, you will take responsibility for service execution, guest experience and team performance. You will help ensure consistency, energy and high standards across every shift, including during our busiest periods.

Working as part of a broader leadership team, you will contribute to the day-to-day operation of Lower Deck while also helping us improve and develop the business.

This is a hands-on role requiring a visible and proactive leadership style. You will lead from the front, support your team and help create an organised, positive and high-performing working environment.

Key Responsibilities

• Take ownership of service leadership and shift performance.





• Deliver an exceptional and consistent guest experience.

• Lead, mentor and develop a large front-of-house team.

• Set clear expectations and hold team members accountable to agreed standards.

• Maintain strong service flow and operational efficiency during high-volume periods.

• Ensure seamless communication between the kitchen and front-of-house teams.

• Monitor staffing levels and labour costs throughout service.

• Take ownership of an allocated management portfolio and achieve agreed results.

• Support stock control, team briefings, financial reporting and compliance requirements.

• Contribute to the ongoing improvement of service and operational practices.

• Participate in broader leadership discussions and business planning.

• Deliver positive results across all areas of budgetary responsibility.

About You

• Previous experience in a hospitality leadership role.

• Experience working in a busy, high-volume restaurant, café or hospitality venue.

• A confident communicator with a clear, practical and supportive leadership style.

• Highly organised, with the ability to prioritise and make decisions under pressure.

• Passionate about hospitality, guest service and team development.





• Commercially aware and interested in learning how to manage the financial performance of a venue.

• Comfortable leading from the front and maintaining a positive, professional presence on the floor.

• Senior hospitality professionals who are ready to take the next step into management will also be considered.
