Job Description
Western Meats Pty Ltd
The Butcher will be responsible for: Selecting and inspecting carcasses, sides and quarters for boning and processing, checking quality and freshness
Cutting, sawing, boning meat using knives, cleavers, bandsaws and other butchery equipment.
Preparing standard cuts and retail portions, including mincing, dicing, rolling, tying and crumbing
Producing smallgoods such as sausages, marinated and value added lines by mincing, seasoning, curing and processing meat
Operating mincing, mixing and tenderising machinery
Displaying and pricing meat and smallgoods for sale, and serving customers with advice on selection, cooking and storage
Ensuring all handling, preparation and storage meets food safety, hygiene, HACCP and halal certification requirements
Cleaning and sanitising benches, cool rooms, plant and machinery, and sharpening and maintaining knives, saws and equipment
Monitoring and rotating stock, recording wastage and assisting with ordering supplies
Requirements
Minimum 1 years of butchery experience in a retail or commercial environment
Strong knowledge of halal meat preparation methods and Islamic slaughter requirements




Proficiency in butchery techniques and product knowledge across multiple meat types
Valid food handling certification or willingness to obtain
Excellent attention to detail and commitment to food safety standards
Reliable, punctual, and customer focused
Ability to work as part of a team
Desirable Experience in a halal butchery environment
Knowledge of diverse meat cuts and specialty products
First aid qualifications
