About the company This is a rare opportunity to join
one of Western Sydney’s most established and respected Italian
restaurants , operating successfully for over 25 years . The venue
is entering a new chapter with the arrival of a new General Manager
and a renewed focus on structure, quality, and long-term team
stability. With a 220-seat capacity , a busy bar operation, and a
strong focus on wine-led service, the venue combines high-volume
trade with consistently high standards across both bar and floor
service. The business is family-owned, owns its venue , and is
deeply committed to retaining staff long-term - many team members
have been here 10–25+ years , and the owners are not going
anywhere. This is a workplace for workers who want security,
respect, and room to grow , not short-term churn. About the role We
are recruiting a Bar Supervisor / Assistant Sommelier to support
daily bar and beverage operations while delivering an exceptional
guest experience on the floor. This is a hands-on role , combining
bar service, wine expertise, and team supervision. You will work
closely with the Head Sommelier. The role suits someone passionate
about wine - particularly Italian wines - who enjoys being
operational, leading by example, and contributing to a
collaborative FOH team. The role offers a 5-day working week , with
finishes by 10:30 pm at the latest - an excellent work-life balance
for a bar position. Responsibilities Oversee daily bar operations
and service execution Deliver hands-on bar and floor service during
busy services Supervise and support a small, experienced bar team
(approx. 3–4 staff) Manage wine ordering, stock control, and
general cellar organisation Execute and contribute to the ongoing
development of the wine list Ensure service standards,
cleanliness,
and organisation behind the bar Train and guide junior FOH and bar
staff on wine knowledge and service Work closely with management to
ensure smooth communication between FOH and BOH Contribute
creatively to menu evolution and new dish development Uphold food
safety, hygiene, and workplace standards About you Previous
experience as a Bar Supervisor, Assistant Sommelier, or senior bar
professional Strong emphasis on Italian wines (approx. 70% Italian
/ 30% Australian, 75+ wine references) Hands-on, organised, and
comfortable in a fast-paced, high-volume environment Natural leader
with an outgoing, hardworking, and team-oriented mindset Passionate
about hospitality, service, and Italian food culture Reliable,
professional, and looking for a long-term role within a reliable
venue Italian experience or heritage is a plus, but not essential.
