The Langham Hotel Melbourne is currently looking for a full-time Chef de Partie to join our highly acclaimed fast paced Kitchen team.

You will have the opportunity to work with the Kitchen Brigade which consists of approximately 50 colleagues. This is an exciting opportunity for you to grow your hotel skill set in order to build a career with-in The Langham, shall you be determined and dedicated.

Previous experience in a fast paced working environment will be highly regarded, along with demonstrated experience in large volume production cooking.

Your responsibilities will include

- Control the function of their section and assist in contributing to the overall food and beverage department profit.
- Ensure all menus and foods produced in their section are to the standards set down by the Head Chef and management team.
- Responsible for the daily menu planning of their respective section with the Chef de Cuisine and Sous Chef.
- Responsible for daily preparation of all food requirements and daily specials for their section.
- Advise other chefs on duty, on ways to minimise waste.
- Develop and conduct on-the-job training sessions with all colleagues at lower levels.
- Check colleague's work schedules to ensure appropriate coverage for the shift. Any concerns must be reported to either the Sous Chef or Head Chef.
- Give effective instructions to colleagues of a lower grade to run their section correctly.
- Read and understand daily reservations and forecasts as necessary.
- Order food products to service the section's operational needs.



Requisition of those products via the system in place.
- Ensure that their section maintains the standards set by the City and State Health Department Codes through proper cleaning and maintenance.
- Ensure that the above applies in accordance with established standards with respect to preparation, storage, sanitation and general hygiene.

For this role, your attributes will be inclusive of the following:
- Formal qualifications in Culinary.
- at least2 years of experience in a similar role, ideally within a luxury hotel or similar environment
- Proven skills in cooking breakfast for large volumes
- Strong technical skills within the pan and grill areas
- Ability to work well under pressure
- Excellent communication skills
- Proven organisational & time management skills
- Team player
- Quality awareness

The successful candidate will be required to work rotating shifts over a 7-day period.
