About the Role We are seeking an experienced, creative, and highly organised Pastry Chef to lead our pastry production team. The successful candidate will oversee all aspects of pastry production, recipe development, quality assurance, production planning, inventory management, and staff training while maintaining the highest standards of food safety and operational excellence.

Key Duties & Responsibilities Production Planning & Kitchen Leadership

- Plan, coordinate, and oversee daily pastry production schedules to meet customer demand while maintaining production efficiency.
- Allocate daily production tasks and supervise pastry cooks and bakery assistants.
- Ensure efficient workflow, minimise production downtime, and maintain consistent product quality.

Recipe Development & Product Innovation

- Develop, refine, and standardise recipes for croissants, Danish pastries, tarts, cakes, seasonal pastries, and other specialty baked products.
- Create new menu items and seasonal products aligned with Henry's Bakehouse's brand and quality standards.
- Review recipes and production methods to improve efficiency, consistency, and product quality.

Ingredient Selection & Production Preparation

- Source, inspect, and verify premium raw ingredients including high-protein flour, premium butter sheets, premium chocolate, fresh dairy products, nuts, and natural flavourings.
- Calculate production requirements and accurately scale ingredients for daily production.
- Oversee the preparation of custards,



whipped cream, caramel, ganache, chocolate work, glazes, fresh fruit preparations, and signature fillings including pistachio cream, matcha cream, hazelnut cream, Nutella fillings, and savoury croissant fillings.

Dough Preparation & Pastry Production

- Plan and oversee the preparation of laminated and specialty doughs including croissant, Danish, brioche, tart, and other artisan pastry products.
- Prepare, mix, scale, knead, laminate, sheet, fold, cut, shape, proof, and bake pastry products while ensuring correct dough hydration, gluten development, butter incorporation, fermentation, and proofing conditions.
- Monitor dough consistency, fermentation, and production yields to minimise waste and maximise product quality.
- Supervise pastry production to ensure all products meet company specifications and production schedules.

Baking & Thermal Processing

- Operate and supervise commercial deck and convection ovens by controlling baking temperatures, steam injection, baking times, and cooling procedures.
- Optimise baking schedules to ensure premium texture, flavour, colour, and consistency across all pastry products.

Quality Assurance

- Inspect finished products for appearance, texture, flavour, consistency, size, and presentation.
- Maintain strict quality assurance procedures throughout all stages of production.
- Investigate production issues and implement corrective actions to improve consistency and reduce waste.

Inventory & Cost Control

- Manage inventory levels and ingredient ordering to support daily production requirements.
- Monitor food costs, ingredient usage, production yields, and wastage.
- Maintain FIFO stock rotation and accurate stock records.
- Liaise with suppliers regarding ingredient quality and deliveries.

Staff Training & Supervision

- Train, mentor,



and supervise pastry cooks, bakery assistants, and junior staff.
- Ensure all team members follow company recipes, food safety procedures, and quality standards.
- Provide ongoing coaching to improve technical pastry skills and production efficiency.

Food Safety & Operational Compliance

- Ensure compliance with WHS, HACCP, and all applicable food safety regulations.
- Maintain temperature logs, production records, cleaning schedules, and food safety documentation.
- Conduct regular inspections of production areas and bakery equipment to ensure safe operation.

Workplace Maintenance

- Oversee cleaning and preventative maintenance of bakery equipment including mixers, laminators, proofers, ovens, and refrigeration equipment.
- Maintain a clean, organised, and hygienic production workplace at all times.

Required Qualifications, Skills & Experience

- AQF Certificate IV or Diploma in Patisserie, Baking, Commercial Cookery, or an equivalent qualification plus at least two (2) years of relevant full-time post-qualification experience as a Pastry Chef or Senior Pastry Cook;OR
- At least three (3) years of relevant full-time experience as a Pastry Chef in a commercial bakery, patisserie, or high-volume pastry production environment.
- Extensive knowledge of laminated dough production, fermentation, proofing, baking techniques, and pastry finishing.
- Demonstrated experience in recipe development, menu planning, and production scheduling.
- Strong understanding of food costing, inventory management, and waste minimisation.
- Thorough knowledge of WHS, HACCP, and Australian food safety regulations.
- Proven leadership, communication, and staff supervision skills.
- Excellent organisational and time-management skills with the ability to work under pressure.
- High attention to detail and commitment to producing premium-quality artisan pastries.
- Good spoken and written English communication skills.
