About us

Toto Fish Bar is a Japanese fish bar coming to Glen Waverley -- fresh seafood, a fun team, and a concept that Glen Waverley has never seen before. No egos, staff meals on us, and a real chance to shape something new from day one.

What you'll be doing

(Sushi Chef level)

- Prepare fish, seafood, rice, sauces and garnishes to spec

- Nigiri, maki, sashimi -- knife work and plating on point, every order

- Keep the station tight -- clean, labelled, organised

- Food safety and hygiene done properly, every shift (raw fish handling, temp control)

- Communicate clearly with FOH and the rest of the kitchen during service

- Follow prep lists, flag low stock, minimise waste

- Work quick under pressure without dropping quality

(Sous Chef level)

- Right hand to the Head Chef -- prep, service, organisation, the works

- Hold the standard: quality, plating, portions, consistency

- Own the prep lists, stock, ordering and waste

- Develop the junior team and step up when needed

- Help build the systems that make this kitchen run





Ideal experience

- Experience handling sushi and sashimi

- Knife skills you're proud of and food safety discipline to match

- Team-first, ego-last attitude

- Availability to work weekends (essential)

- Must have current working rights

For Sous Chef applicants, these will stand out:

- Previous Sous Chef, Chef de Partie or strong senior cook experience.

- Food Safety Supervisor cert, or willingness to complete one
