About Us
We're a growing, owner-operated hospitality group running three
restaurants in the Baw Baw Shire. We're known for consistent quality,
a loyal local following, and a rapid-paced, high-volume service style. As we expand,
we need an experienced multi-site leader to bring consistency, accountability, and
energy across all three venues.
About the Role
This is a hands-on leadership role overseeing day-to-day operations across three
sites. You'll split your time between venues, coach venue supervisors, drive rosters
and labour costs, protect margins, and make sure every site is running to the same
standard on a Friday night as it is on a quiet Tuesday morning.
This is a genuinely demanding, high-accountability role. Weekend and public
holiday work is a core, ongoing requirement — these are our busiest and most
important trading periods, and we need a manager who is present and leading from
the front during them. Hospitality doesn't run 9-to-5, and neither does this role; hours
will regularly extend beyond a standard week, particularly across Friday–Sunday and
public holiday trade.
Key Responsibilities
Oversee daily operations across three venues, rotating presence based on trading needs
Roster, coach, and performance-manage venue supervisors and staff across
sites
Own labour cost, food cost (COGS), and wastage targets per venue
Ensure compliance with food safety, OH&S;, and liquor licensing requirements
at each site
Drive consistency in service standards, presentation,
and customer
experience across all locations
Manage supplier relationships, stock control, and ordering across the group
Handle escalations, complaints, and on-the-floor problem solving in real time
Report on venue performance (sales, labour %, wastage, incidents) to the
Director
Support recruitment, onboarding, and training of frontline staff
Step into a floor/shift role personally when a venue is short-staffed or under
pressure
What We're Looking For
Proven experience managing multiple hospitality venues simultaneously
(essential)
Strong understanding of rostering, labour cost control, and P&L accountability
Comfortable working weekends, public holidays, and irregular hours as
standard, not exception
A valid RSA and Food Safety Supervisor certificate (or willingness to obtain)
Own reliable vehicle — regular travel between sites required
Calm under pressure, hands-on leadership style, and high personal
accountability
Experience with rostering systems highly regarded

$75,000–$90,000 base salary (commensurate with experience) +
