L'unico Trattoria is a 180-seat beachfront Italian restaurantlocated in Trinity Beach. Operating for over 31 years, the restaurant is an institution within the Cairns Northern Beaches dining scene, attracting locals and tourists who enjoy great food in a relaxed atmosphere with ever-changing ocean views.
We are seeking a professional and driven full-time Commis Chef who shares our passion for creating memorable dining experiences using the incredible array of fresh local produce and in inherent desire for consistently high quality. A chef who can deliver our customers’ favourite dishes and grow with us long-term.
Tasks and responsibilities include:
- Planning menus in consultation with the team
- Preparing and cooking a range of dishes to a consistently high standard- Monitoring the quality of dishes throughout preparation and service
- Ensuring food is prepared and presented in accordance with restaurant standards- Demonstrating techniques and advising junior kitchen staffon cooking procedures
- Maintaining stock levels and assisting with ordering
- Explaining and enforcing hygiene regulations
- Assisting with training and mentoring of junior kitchen staff
- Maintaining a clean, organised and safe kitchen environment
Qualifications and experience:
- Relevant commercial cookery qualifications (diploma or equivalent)
- At least 12 months relevant experience in a commercial kitchen environment
- Ability to work effectively in a rapid-paced restaurant environment
- Strong organisational skills and attention to detail
- Ability to work as part of a team and demonstrate leadership when required
- Flexibility for work evenings, weekends and public holidays
