GEMA On Tour is Australia's leading food and beverage event management company, delivering some of the country's largest and most recognised sporting events, festivals, agricultural shows and major public activations.
From Formula 1 and Supercars to the Melbourne Royal Show and major venue partnerships, we coordinate hundreds of mobile food vendors nationally and we're growing rapidly.
We're looking for an experienced Event Operations Coordinator who loves being on the ground, solving problems, leading logistics and making large-scale events run seamlessly.
This is not a desk job.
You'll be the operational lead onsite, managing everything from vendor bump in through to bump out, ensuring every food truck, trailer and pop-up is operating safely, compliantly and efficiently.

About the Role
Working alongside our National Operations team, you'll be responsible for the operational delivery of food and beverage precincts across Australia.
Your focus will be ensuring vendors are set up correctly, operating safely and delivering an outstanding customer experience throughout the event.
No two weeks are the same. One week you may be planning logistics from the office, the next you could be running operations for over 100 food vendors at one of Australia's biggest events.
Key Responsibilities
Event Operations
- Lead the onsite delivery of food and beverage operations at major events.
- Manage vendor bump in and bump out from start to finish.
- Coordinate vehicle movements, site access and contractor logistics.
- Allocate vendor sites and ensure accurate placement according to event plans.
- Troubleshoot operational issues quickly and calmly throughout the event.
- Be the primary onsite operational contact for vendors and event stakeholders.
Vendor Management
- Build robust relationships with our national network of food vendors.
- Ensure vendors receive all operational information before each event.
- Coordinate arrival times, access requirements, utilities and site logistics.
- Resolve vendor enquiries professionally before, during and after events.
Compliance & Safety
- Conduct onsite compliance inspections before vendors commence trading.
- Verify licences, insurances, food safety documentation and operational compliance.
- Ensure vendors operate in accordance with event rules and WHS requirements.
- Work closely with event management teams to maintain safe and compliant precincts.
Planning & Logistics
- Prepare operational documentation including bump in schedules, site maps and vendor communications.
- Coordinate equipment, utilities and contractor requirements.
- Assist with event planning and operational scheduling using Monday.com.
- Support continuous improvement of operational processes across the business.
Reporting
- Collect daily sales and operational information.
- Complete post-event reporting and debriefs.
- Identify opportunities to improve future event operations.
About You
You'll be someone who enjoys being in the middle of the action.
You're organised, practical and confident making decisions in fast-moving environments. You don't wait for someone else to solve a problem, you jump in and make it happen.
Ideally you'll have experience in:

Skills & Experience
- Previous experience in event operations or logistics.
- Exceptional organisational skills.
- Ability to manage multiple priorities simultaneously.
- Strong leadership and communication skills.
- Comfortable working outdoors in all conditions.
- Excellent problem-solving ability.
- High attention to detail.
- Proficient in Microsoft Office.
- Experience using Monday.com (or similar project management software) is desirable.
- Forklift Licence highly regarded.
- White Card is essential
- Current Driver Licence essential.
Travel
This role involves regular interstate travel to major events throughout Australia. Event periods may require weekend work and extended time away from home.
