About the role

We are seeking an experienced Sommelier to join the team at Aambra Pty Ltd in Rose Bay, NSW. This is a full-time position offering an exciting prospect to showcase your expertise in wine selection, pairing and service within a dynamic hospitality environment. As a Sommelier, you will be at the forefront of our guests' dining experience, curating wine selections and providing sophisticated beverage guidance that elevates every meal. Your knowledge, passion and professionalism will play a crucial role in building our reputation as a destination for exceptional food and wine experiences.

Key responsibilities

- Develop and maintain comprehensive knowledge of our wine list, including production methods, regions, vintages and flavour profiles

- Provide expert wine recommendations and pairings tailored to guests' preferences, budgets and dietary requirements

- Conduct wine tastings and educational sessions to enhance guest knowledge and appreciation

- Manage wine inventory, including ordering, stock rotation and quality control to ensure optimal freshness

- Maintain wine storage conditions and ensure proper handling of all beverages

- Train and mentor bar and service staff on wine offerings, service techniques and upselling opportunities

- Liaise with wine suppliers and distributors to source quality selections and negotiate terms

- Create wine lists and menus that complement our culinary offerings and reflect current market trends

- Deliver exceptional service to guests, building relationships and ensuring memorable dining experiences

- Monitor sales performance and recommend adjustments to optimise profitability and guest satisfaction

What we're looking for

- Formal sommelier qualification or equivalent certification (WSET Level 2 or higher, Court of Master Sommeliers certification,



or similar recognised qualification)

- Minimum of 3-5 years' professional experience in a sommelier or advanced beverage role within a fine dining or upmarket hospitality establishment

- Extensive knowledge of wines from major regions worldwide, including European and New World varieties

- Expert understanding of wine production, viticulture, and the factors that influence wine quality and characteristics

- Strong ability to communicate complex wine information in an accessible and engaging manner to guests of all knowledge levels

- Excellent customer service skills with the ability to build rapport and create memorable experiences

- Proficiency in wine service techniques, including opening, decanting, and serving wines at appropriate temperatures

- Demonstrated knowledge of food and wine pairing principles and culinary compatibility

- Strong organisational and inventory management skills with attention to detail

- Ability to work effectively in a fast-paced environment whilst maintaining composure and professionalism

- Experience with point-of-sale (POS) systems and beverage management software is advantageous

- Passion for hospitality, continuous learning and staying current with wine industry trends
