Key Responsibilities - Lead and develop a high-performing bar team in a premium fine dining environment
Create and execute a seasonal, creative cocktail list aligned with Bennelong’s food and wine offering
Manage daily bar operations with consistency and attention to detail
Oversee stock control, ordering, and cost management
Collaborate closely with sommeliers and restaurant leadership
Deliver exceptional guest experiences in a high-volume,



refined service setting What We’re Looking For - 2+ years’ experience as a Bar Manager in fine dining or premium restaurants
5+ years’ experience working in a fine dining restaurant in various roles, including Management positions
Strong knowledge of cocktails, spirits, and contemporary beverage trends
Proven leadership skills with a focus on training and team development
Excellent communication, organisation, and service standards
Ability to remain calm and consistent under pressure
WSET Level 2 or higher (preferred)
Full Australian working rights
