We are seeking a Senior Bartender to join the Pilu at Freshwater team, where quality, consistency, and professionalism define the guest experience. This is not your typical front-of-house bar role. Our bar operates in a compact and high-pressure environment, where efficiency, speed, and organisation are essential to ensure seamless service for our guests. You’ll be responsible for overseeing bar operations, maintaining the highest standards in drink preparation, and supporting our service team with precision and poise.

What are we looking for?
Minimum 2–3 years’ experience in a high-volume bar or fine dining setting, with at least 1 year in a senior role.
Exceptional organisational skills with a calm, methodical approach under pressure.
Deep understanding of Italian wines, cocktails, and spirits is a plus.
Able to thrive in confined workspaces and maintain operational flow with varied and relatively limited storage.
Strong communication and teamwork abilities, with a proactive and solutions-oriented mindset.
Passionate about delivering a premium guest experience through attention to detail and consistency.

What you'll do.




Prepare classic and contemporary Italian-inspired cocktails, aperitifs, and a curated wine and spirits selection with speed and accuracy.
Maintain a highly organised, clean, and productive bar workspace with minimal storage.
Collaborate closely with floor staff to ensure timely and consistent drink service.
Lead by example, mentoring junior bar staff and ensuring compliance with health and safety standards.
Manage inventory and stock rotation in limited storage conditions.
Uphold and embody the refined service standards of our fine dining establishment.
