O'Brien's Wholesale Meats is seeking an experienced Meat Boner and Slicer to join our production team at our Burton facility.
This is a full-time role for an experienced worker with robust knife-handling, boning, slicing and trimming skills.
The role involves processing meat that has already been slaughtered and delivered to the facility.
It does not involve slaughtering livestock.
Key duties
Operating switching controls to direct and drop carcasses and meat cuts from supply rails to boning tables.
Cutting meat to separate meat, fat and tissue from around bones using hand knives and boning equipment.
Washing, scraping and trimming foreign material, blood and bone fragments from meat.
Cutting sides and quarters of meat into standard commercial cuts, including rumps, flanks and shoulders.
Removing internal fat, blood clots, bruises and other unwanted matter to prepare meat cuts for packing and marketing.
Trimming and portioning meat accurately in accordance with product specifications and quality standards.
Sharpening, cleaning and maintaining knives, boning tools and cutting equipment throughout each shift.
Maintaining a clean and hygienic workstation and complying with food safety, HACCP and workplace safety procedures.




Working safely and consistently in a chilled meat-processing environment.
The role does not include operating restraining or stunning equipment, bleeding animals, removing animal heads, eviscerating carcasses or slaughtering livestock.
Skills and experience
At least one year of relevant commercial boning, slicing or meat-trimming experience.
Demonstrated ability to safely and accurately remove meat from bones, sides and carcass sections.
Robust knife-handling, sharpening and maintenance skills.
Knowledge of food safety, hygiene and protected operating procedures.
Ability to perform physically demanding and repetitive work in a chilled environment.
Reliable attendance, a strong work ethic and the ability to work effectively within a production team.
