Ember & Ash Brisbane Reporting to the Head Chef and Culinary Director, the Sous Chef will assist in the day-to-day management of kitchen operations, maintain high food quality standards, supervise kitchen staff, and support the delivery of exceptional dining experiences. Benefits Salary: AUD $80,000 per annum plus superannuation. Task & responsibilities Key Responsibilities Assist in planning and organising kitchen operations.

Supervise food preparation and cooking activities. Ensure consistent food quality, presentation and portion control. Train, supervise and support kitchen staff.

Assist with menu development and recipe implementation. Monitor stock levels, ordering and inventory control. Maintain food safety, hygiene and workplace health and safety standards.

Assist in managing food costs and reducing wastage. Lead kitchen operations in the absence of the Head Chef. Assist the Head Chef in managing daily kitchen operations.

Ensure high standards of food preparation, presentation, and consistency. Train, mentor and support junior chefs and apprentices. Assist with menu development, recipe implementation and food costing.

Manage stock control, ordering,



rotation and inventory processes. Minimise food wastage and maintain efficient kitchen operations. Qualification & experience Certificate IV in Commercial Cookery or equivalent qualification.

Minimum 1 - 2 years' experience in a senior chef role within a commercial kitchen. Strong leadership and team management skills. Excellent knowledge of food preparation techniques and kitchen operations.

Sound understanding of food safety and HACCP requirements. Strong organisational and communication skills. Ability to work effectively in a fast-paced setting.
