JOB SCOPE

Support the efficient operation of the kitchen by preparing and cooking food, maintaining high standards of food safety, cleanliness and hygiene, assisting with kitchen operations, and ensuring all back-of-house activities are completed in accordance with Plaza Premium Group standards.

JOB RESPONSIBILITIES

Food Preparation & Cooking

- Prepare, cook and present food in accordance with approved recipes and company standards.
- Measure, weigh and prepare ingredients for daily service.
- Bake, grill, steam, boil and reheat food items as required.
- Ensure ingredients and finished products are fresh, safe and of high quality.
- Garnish and present dishes to company presentation standards.
- Accommodate guest dietary requirements and special requests where appropriate.
- Occasionally assist with food service during busy periods.

Kitchen Operations

- Set up workstations with the required ingredients, utensils and equipment before service.
- Monitor stock levels and report shortages to the Head Chef.
- Assist with receiving, unloading, checking and storing deliveries.
- Ensure ingredients are stored correctly following food safety requirements.
- Keep storerooms organised, clean and safe.
- Execute opening and closing kitchen procedures.

Cleaning & Hygiene

- Maintain exceptional cleanliness throughout all kitchen and food preparation areas.
- Clean and sanitise benches, workstations, kitchen surfaces, equipment and utensils.
- Wash and store dishes, pots, pans and cooking equipment.
- Sweep and mop kitchen floors.
- Polish cutlery and glassware as required.
- Remove rubbish and maintain waste disposal areas.
- Operate commercial cleaning equipment safely and correctly.

Food Safety & Compliance

- Maintain Food Safety, HACCP and sanitation standards at all times.
- Follow all Workplace Health & Safety (WHS)



policies and procedures.
- Use appropriate Personal Protective Equipment (PPE) when performing duties.
- Apply safe manual handling techniques.
- Report equipment faults, hazards and maintenance issues promptly.
- Minimise operational risks through safe work practices and compliance with company policies.

Teamwork & Service

- Follow all outlet procedures and service standards.
- Work collaboratively with chefs and kitchen team members.
- Maintain a positive, qualified and friendly attitude.
- Complete assigned duties efficiently with minimal supervision.
- Support the team during peak service periods and perform additional duties as directed by management.

JOB REQUIREMENTS

- Previous experience in a commercial kitchen, food preparation or kitchen hand role.
- Basic knowledge of food preparation techniques and food safety practices.
- Experience using commercial kitchen equipment and industrial cleaning products.
- Understanding of WHS, food hygiene and sanitation standards.
- Ability to work efficiently under pressure in a fast-paced environment.
- Strong attention to detail and commitment to cleanliness.
- Good communication and teamwork skills.
- Able to work independently with minimal supervision.
- Friendly, professional and customer-focused attitude.
- Flexibility to work mornings, evenings, weekends and public holidays.
