JobScout Pty Ltd are working to assist our client, Waves on the Beach, who runs a popular beachside dining destination. The restaurant is a local favourite, offering a diverse menu prepared with fresh ingredients. Catering for lunch and dinner, this busy restaurant provides a welcoming atmosphere that keeps guests coming back. With a commitment to quality food and exceptional service, Waves on the Beach has become a favourite dining spot for both locals and visitors.
Our client is now seeking a recent Chef to join and lead their happy and productive kitchen team. The role is full time and ongoing, requiring shifts across the week and weekend.
Responsibilities of our Chef will include:
· Design and revise the menu for service, ensuring dishes and pricing align with market positioning and deliver the restaurant’s targeted profit margin.
· Work with the Head Chef to develop creative weekly specials that align with the restaurant's concept and ethos, helping to minimise wastage and test potential menu items.
· Meet or exceed agreed budgets while maintaining the highest standards of consistency, quality, food production, presentation and service.
· Effectively lead and mentor the kitchen team to ensure they have the relevant skills to deliver exceptional customer service.
· Oversee daily kitchen operations, ensuring smooth service during busy periods.
· Prepare and cook meals as part of the team during service hours.
· Plan and revise menus to ensure diners with dietary requirements or preferences are well catered to.
· Demonstrate cooking techniques to kitchen staff.
· Ensure purchases of seasonal ingredients are made at optimal pricing, sourcing from local suppliers where possible.
· Ensure all dishes are prepared to the highest quality standards, consistently delivering exceptional dining experiences.
· Monitor food presentation and plating,
ensuring consistency across all dishes.
· Regularly check food quality, freshness, and storage procedures.
· Ensure proper functioning and maintenance of kitchen equipment.
· Minimise food costs, waste and theft, and manage portion control to optimise cost-effectiveness.
· Maintain strict food safety and hygiene standards in compliance with Australian food safety regulations, local health codes and HACCP requirements.
· Ensure proper handling, storage, and preparation of food items to avoid contamination and meet health standards.
· Implement and monitor cleaning schedules for kitchen equipment and workspaces.
· Coordinate with front-of-house staff to manage special dietary requirements and ensure customer needs are met.
· Handle any issues or complaints regarding food quality swiftly and professionally, in line with agreed customer satisfaction and retention metrics.
· Manage OHS risks in the kitchen and keep accurate records of all OHS matters, ensuring compliance with WHS legislation and business policies and procedures.
· Create a harmonious, professional work environment amongst all kitchen staff.
Qualifications and experience required:
· Possess an AQF associate degree, Advanced Diploma or Diploma in Cookery or a related field. In some instances, relevant experience and/or on-the-job training may be required in addition to the formal qualification.
· Where formal qualifications are not held,
at least three years of relevant experience at the required skill level may be considered in substitution.
· Have a minimum of 1 year of post-qualification experience as a Chef. 3+ years is highly regarded.
· Possess a thorough understanding of food safety and HACCP.
· Understand cost control, time management, prioritisation, and cost-efficient procurement practices.
· Have experience working in a similar cuisine and professional environment.
· Offer proven ability to prioritise, set goals and the determination to achieve them.
· Are available across the working week and weekends.
· Always maintain a professional attitude in the kitchen.
Have a creative eye for detail and a 'can do' attitude.
