About Not a Trace Bakery

Not a Trace Bakery is one of Australia’s leading gluten-free bakeries, producing premium gluten-free biscuits, cookies, and bakery products for retail, foodservice, and manufacturing customers. We are passionate about quality, food safety, and creating products that customers trust.

As we continue to grow, we are looking for a proactive Quality Coordinator to join our team and play a key role in maintaining our food safety and quality standards across the bakery.

About the role

This is a hands-on quality role where you will work closely with production, operations, and technical teams to ensure products consistently meet customer, regulatory, and company requirements.

You will help maintain our HACCP and quality systems, support audits, investigate quality issues, and drive continuous improvement across the site.

Key responsibilities

- Monitor and maintain HACCP, GMP, and food safety systems

- Conduct production and quality inspections

- Complete quality checks, verification activities, and record reviews

- Investigate customer complaints and non-conformances

- Coordinate corrective and preventive actions

- Support internal, customer, and third-party audits

- Assist with allergen management and environmental monitoring programs

- Maintain quality documentation and records





- Train and coach production staff on quality and food safety requirements

- Participate in continuous improvement initiatives to improve product quality

About you

You will be someone who enjoys being on the factory floor, solving problems, and working collaboratively with production teams.

You will ideally have:

- Experience in a food manufacturing quality assurance or quality coordination role

- Knowledge of HACCP, GMP, allergen management, and food safety standards

- Solid attention to detail and organisational skills

- Good communication skills and the ability to influence others positively

- Experience with audit preparation and compliance activities

- A Certificate, Diploma, or Degree in Food Science, Food Technology, or a related discipline (preferred)
