A unique opportunity has become available and we are looking for a commercially astute hospitality leader who thrives in businesses that require both strategic thinking and hands-on execution.
This is not a role for someone who wants to sit behind a desk or inherit a large management team.
We need a leader who enjoys being on the floor, understands every aspect of hospitality operations, and is prepared to roll up their sleeves when required.
Someone who leads by example, earns the respect of their team, and takes genuine ownership of the guest experience and financial performance.
Our hospitality division consists of a destination restaurant and a highly regarded functions and weddings venue operating alongside a successful winery.
While the functions business generates the majority of revenue, it is highly seasonal, with peak trading driven by weddings.
The restaurant operates Wednesday through Sunday, with quieter midweek trade and extremely busy weekends.
This creates a business that requires careful workforce planning, disciplined cost management and strong operational leadership.
The successful candidate will understand that profitability is created through hundreds of daily decisions rather than simply driving revenue.
They will have exceptional commercial acumen and be confident managing labour, payroll, rostering, purchasing, stock control and operating costs while maintaining high service standards.
They will be comfortable leading a lean management structure, developing capable people and ensuring each department works collaboratively toward common business goals.
Working closely with the restaurant leadership team and the functions sales and operations teams, they will create alignment between front-of-house operations, events and the broader winery business.
Above all, they will understand how to maximise seasonal opportunities while building stronger year-round performance.
The Ideal Candidate
The person we're looking for will have:
Significant senior hospitality leadership experience across premium restaurants, events, functions or destination venues.
Strong commercial and financial acumen with a proven ability to manage budgets, payroll percentages, labour productivity and profitability.
Experience leading businesses with highly seasonal demand and fluctuating staffing requirements.
A hands-on leadership style with a willingness to support the team wherever required.
The ability to coach, mentor and develop leaders while creating accountability throughout the business.
Excellent rostering and workforce planning skills, balancing service standards with labour efficiency.
Confidence interpreting financial reports and using data to make operational decisions.
Experience improving systems, processes and guest experiences without relying on significant capital expenditure.
Strong communication skills with the ability to build relationships across operations, sales, kitchen, winery and executive leadership.
