Job Description

Western Meats Pty Ltd

- The Butcher will be responsible for: Selecting and inspecting carcasses, sides and quarters for boning and processing, checking quality and freshness
- Cutting, sawing, boning meat using knives, cleavers, bandsaws and other butchery equipment.
- Preparing standard cuts and retail portions, including mincing, dicing, rolling, tying and crumbing
- Producing smallgoods such as sausages, marinated and value added lines by mincing, seasoning, curing and processing meat
- Operating mincing, mixing and tenderising machinery
- Displaying and pricing meat and smallgoods for sale, and serving customers with advice on selection, cooking and storage
- Ensuring all handling, preparation and storage meets food safety, hygiene, HACCP and halal certification requirements
- Cleaning and sanitising benches, cool rooms, plant and machinery, and sharpening and maintaining knives, saws and equipment
- Monitoring and rotating stock, recording wastage and assisting with ordering supplies

Requirements

- Minimum 1 years of butchery experience in a retail or commercial environment
- Strong knowledge of halal meat preparation methods and Islamic slaughter requirements




- Proficiency in butchery techniques and product knowledge across multiple meat types
- Valid food handling certification or willingness to obtain
- Excellent attention to detail and commitment to food safety standards
- Reliable, punctual, and customer focused
- Ability to work as part of a team
- Desirable Experience in a halal butchery environment
- Knowledge of diverse meat cuts and specialty products
