Casa Luna is looking for an experienced and hands-on Bar Manager to lead our bar operation.

Casa Luna is a modern Australian and Mediterranean restaurant, cocktail bar and late-night venue in the heart of Byron Bay. We offer a strong food and beverage program, live music, DJs, events and a quick-paced weekend trade.

This role would suit someone who is confident leading a team, maintaining high standards and taking ownership of the financial and operational performance of the bar.

Key Responsibilities

- Lead, train and manage the bar team
- Maintain excellent cocktail, beverage and service standards
- Manage bar rosters and labour costs
- Complete weekly ordering, stocktakes and supplier management
- Monitor beverage costs, wastage, margins and COGS
- Develop and maintain cocktail menus and beverage offerings
- Ensure the bar is clean, organised and ready for service
- Manage busy restaurant, cocktail and late-night services
- Work closely with the owners, kitchen and floor management teams
- Maintain RSA, licensing, workplace safety and venue compliance
- Assist with functions, private events and venue activations
- Build a positive, accountable and professional team culture

About You





- Previous experience as a Bar Manager, Assistant Bar Manager or senior bartender
- Strong cocktail, spirits, wine and beverage knowledge
- Confident managing high-volume services
- Experience with stock control, ordering and cost management
- Strong leadership and communication skills
- Reliable, organised and comfortable taking responsibility
- Available to work evenings and weekends
- Current NSW RSA
- Experience with Square, Restoke or similar systems is beneficial
