Position Purpose
The Chef is responsible for planning, preparing, and supervising the preparation of authentic Mexican dishes, ensuring consistent quality, presentation, and flavor in every meal served.
This role requires professional culinary expertise, strong knowledge of Mexican cooking techniques and ingredients, excellent organizational skills, and the ability to manage kitchen operations efficiently while maintaining compliance with Australian food safety standards and hygiene requirements.
The Chef will oversee daily kitchen operations, guide staff, and contribute to menu innovation while maintaining the restaurant’s signature authenticity.
Key Responsibilities
Menu & Recipe Management
- Plan and develop menu items focusing on authentic Mexican cuisine, including traditional Mexican dishes, tacos, burritos, enchiladas, quesadillas, fajitas, and accompanying sides and beverages
- Standardize recipes to ensure consistency in flavor, texture,
and presentation across all services.
- Introduce new or seasonal dishes where appropriate, maintaining the brand’s authentic culinary identity.
- Liaise with management regarding menu planning, food costs, and special catering requirements.
Food Preparation & Cooking
- Prepare, cook, and present authentic Mexican dishes, including tacos, burritos, enchiladas, quesadillas, fajitas, and other traditional Mexican cuisine items, to a qualified standard while ensuring consistency in flavor, quality, and presentation.
- Apply traditional Mexican cooking techniques, including preparation of authentic sauces, marinades, seasoning blends, and cooking methods that reflect the flavors and culinary traditions of Mexico.
- Ensure all food preparation and cooking practices comply with Australian food safety standards, hygiene requirements, and customer dietary expectations, including the appropriate management of dietary requirements and food allergies
- Monitor food quality, flavor balance, and portion accuracy at all stages of preparation and service.
Kitchen Operations Oversight
- Coordinate kitchen activities to maintain timely service during dine-in, takeaway, and catering operations.
- Lead, train, and supervise kitchen staff to ensure adherence to preparation standards, hygiene, and service procedures.
- Implement portion control and maintain consistency in plating and presentation.
- Ensure kitchen workflow supports efficiency, safety, and quality during peak hours.
Inventory & Cost Control
- Estimate food and labor costs to support efficient operations.
- Manage stock ordering, supplier coordination, and proper storage and rotation of inventory.
- Minimize wastage and ensure effective use of ingredients and resources.
- Maintain kitchen equipment and monitor operational efficiency.
Food Safety & Compliance
- Ensure compliance with Australian food safety and WHS regulations.
- Maintain cleanliness, hygiene, and safe working conditions throughout all kitchen areas.
- Maintain accurate records for food safety, temperature logs, and staff training.
Qualifications and Experience
- Minimum 3 years of experience in a commercial kitchen (experience with Mexico cuisine preferred).
- Certificate IV in Commercial Cookery or equivalent qualification.
- Proven ability to prepare and cook authentic Mexican dishes with consistency.
- Strong understanding of food safety, cleanliness, and kitchen organization.
- Ability to lead, train, and coordinate staff in a busy service environment.
- Excellent communication, teamwork, and problem-solving skills.

Salary: $75,000 – $85,000 per annum plus super
