About the Position
Our client is seeking to appoint a reliable and dedicated full-time Cook to join the kitchen team at Mister Minh. The successful applicant will have a positive attitude, sound cooking skills and at least three years of relevant commercial kitchen experience.
Reporting To
The Cook will report directly to the Chef.
The typical job responsibilities will include, but are not limited to the following:
- Prepare, season, cook and present a wide variety of dishes using different methods such as grilling, frying, roasting, boiling, steaming, and baking.
- Plan and coordinate food preparation activities to ensure timely service and consistent quality.
- Examine and inspect ingredients to ensure freshness, quality, and compliance with hygiene standards.
- Follow standardised recipes and portion control guidelines to maintain consistency across all dishes and control food costs.
- Regulate and monitor the temperature of ovens, grills, and other cooking equipment to achieve the required cooking results.
- Portion, arrange, and garnish dishes to ensure consistency and attractive presentation.
- Store food in temperature-controlled facilities and apply proper stock rotation (FIFO) to maintain freshness and minimise wastage.
- Assist in planning menus, estimating food requirements, and ordering supplies as needed.
- Adapt recipes and cooking methods to accommodate dietary requirements, allergies, special requests, or available ingredients.
- Supervise, mentor, and train kitchen assistants and apprentices in basic food preparation, safe work practices, and hygiene compliance.
- Maintain cleanliness and sanitation of kitchen areas, utensils, and equipment in accordance with food safety regulations and HACCP standards.
- Collaborate with chefs and other kitchen staff to ensure smooth operations, especially during peak service hours or catering functions.
- Monitor cooking processes, including timing and testing for doneness, to ensure food is cooked to safe internal temperatures and desired standards.
- Prepare foundational elements such as stocks, bases, or marinades to support menu items and enhance flavours during cooking.
- Inspect and organize kitchen inventory periodically to identify spoilage risks and support accurate food requirement estimations.
- Demonstrate and enforce protected handling practices for ingredients and equipment to apprentices, promoting compliance with hygiene protocols.
Applicants must meet the following minimum requirements to be considered for the role:
- AQF Certificate III
- A minimum of three years of relevant full-time commercial cooking experience.
- Demonstrated experience preparing meals during breakfast, lunch and dinner services in a busy restaurant, hotel or comparable commercial kitchen.
- Demonstrated experience preparing and cooking Vietnamese or comparable Asian restaurant dishes, including grilled, fried, steamed, simmered, noodle and rice-based meals.
Essential Skills
- Strong knowledge of commercial food preparation methods, cooking techniques and portion control.
- Ability to follow standardised recipes and adapt cooking methods when required.
- Good communication skills to collaborate effectively with colleagues and support smooth kitchen operations.
- Ability to supervise and provide on-the-job training for kitchen assistants and apprentices.
- Teamwork and training skills to guide junior staff and maintain a positive working setting.
- Capability to work efficiently under pressure in a fast-paced commercial kitchen.
- Sound knowledge of food hygiene, workplace safety and HACCP requirements.
- Time management and organisational skills to coordinate multiple tasks and ensure timely service.
- Attention to detail in food presentation, portioning, consistency and quality control.
