Rurouni is a specialized Japanese dining concept focusing on premium techniques, including dry-aged sashimi and high-quality kaisendon. As we operate with an intimate - 30seat capacity across two floors, we are looking for a versatile and skilled Chef who thrives in an "all-rounder" capacity.
You won't just be behind the pass; you will be the face of the brand, managing everything from accurate fish butchery to ensuring our guests have a excellent experience.
Key Responsibilities
- Culinary Excellence: Preparation and service of high-end Asian dishes, with a specific focus on sashimi handling and seafood preparation.
- Inventory & Prep: Assisting with the management of premium ingredients, including monitoring the dry-aging process for fish.
- Operational Flow: Maintaining a clean,
minimalist workspace in accordance with NSW food safety standards.
Requirements
- Cuisine Experience: Proven experience in commercial kitchens, specifically with raw fish handling (Sashimi/Sushi).
- The "All-Rounder" Mindset: A proactive attitude and the ability to work independently in a small, high-efficiency team.
- Communication: Strong English communication skills to interact with our Bondi Junction clientele.
