THE VENUE

Palazzo Salato is the Love, Tilly Group’s most ambitious venture to date; a 120-seat Roman-inspired trattoria and bar located in a heritage-listed building in the heart of Sydney’s CBD. Housed in an 1860s building on Clarence Street, Palazzo is at once brooding, warm and refined.

We serve a menu of hand-rolled pasta, bistecca and whole fish from Australia’s best sustainable farmers, alongside a dynamic lineup of antipasti, contorni and dolci. Our wine list spans approximately 100 pages with close to 800 bottles to choose from, focusing on classics from all parts of Italy with generous nods to France, Australia and the world’s most exciting recent-wave producers.

We are open for lunch and dinner, Monday to Saturday.

ABOUT THE ROLE

We are looking to recruit an energetic, passionate and experienced Section Waiter to join our front-of-house team.

Key responsibilities include:





- Managing your own section with confidence and precision

- Delivering exceptional, warm and refined service to every guest

- Demonstrating thorough knowledge of our menu, pasta offerings and extensive wine list

- Cash handling and POS operations

- Attending pre-shift briefings and participating in ongoing training sessions

- Opening and closing duties

- Contributing to a fun, accessible and professional team atmosphere

ABOUT YOU

To be successful in this role, you will have:

- Minimum 2 years of experience in a similar premium casual or hatted restaurant environment

- Valid working rights in Australia

- Current RSA certificate

- Good ongoing availability for nights and weekends

- Excellent communication skills and immaculate personal presentation

- A genuine passion for great food and wine

- The ability to thrive in a fast-paced, high-volume 120-seat dining room
