JRM Hospitality is proud to partner with one of NSW's most respected hospitality groups in the search for an exceptional Head Chef to lead one of their flagship venues.

This is a rare opportunity to take the reins of a large-scale, multi-concept operation that has quickly established itself as one of South Sydney's premier hospitality destinations. Combining premium casual dining, elevated Italian cuisine, contemporary bistro dining and busy event spaces, this role offers genuine variety, creativity and career progression within a growing organisation.

Operating one of the group's busiest venues, you'll lead a brigade of up to 30 chefs across two commercial kitchens, with trade increasing significantly during the peak summer season.You will be supported by an experienced operations team and a hospitality group with an outstanding reputation for developing both its venues and its people.

The Role

- Lead all culinary operations across multiple dining concepts and service styles.
- Inspire, mentor and develop a brigade of up to 30 chefs, creating a positive and high-performing kitchen culture.
- Drive consistency, quality and presentation across premium casual and contemporary Italian-inspired menus.
- Work collaboratively with senior management on menu development, seasonal offerings and future venue growth.
- Manage food cost, labour, purchasing and stock control to achieve robust commercial outcomes.




- Maintain exceptional standards of food safety, compliance and kitchen organisation.
- Continue building a culture centred around teamwork, accountability and continuous improvement.

About You

- Proven experience as a Head Chef within a high-volume, quality-focused venue.
- Comfortable leading large kitchen brigades across multiple outlets or service styles.
- A natural leader who enjoys coaching, mentoring and developing chefs.
- Commercially astute with strong knowledge of food cost control, labour management and kitchen financials.
- Passionate about fresh produce, seasonality and delivering consistently high-quality food.
- Calm, organised and capable of performing under pressure during peak trade.
