Summary

Our client is seeking to add a full-time Cook to the team at Mok Lee Chinese Restaurant in Redwood Park. Serving the local community since 2021, the restaurant offers authentic Chinese flavours and is seeking an applicant with an AQF Certificate IV and at least one year of relevant experience.

The role reports to the Head Chef.

The typical job responsibilities will include, but are not limited to the following:

- Prepare and maintain house sauces including black bean, Mongolian, satay, sweet and sour and honey sauces ready for service.
- Carry out stir-frying, deep-frying, braising and steaming techniques in the correct sequence and timing to maintain dish quality.
- Maintain a clean and organised workstation, ensuring utensils and ingredients are properly arranged during service.
- Examine incoming ingredients including meat, seafood, vegetables and spices to ensure freshness and quality standards before preparation.
- Regulate and monitor temperatures of gas stoves, ovens, deep fryers and other cooking equipment throughout service.
- Portion cooked food onto plates or takeaway containers and add appropriate sauces, gravies and garnishes.
- Store prepared ingredients and cooked food in temperature-controlled fridges, freezers and storage areas following food safety requirements.
- Prepare and cook Chinese and Asian dishes according to the restaurant’s recipes, including fried rice, noodles,



braised meats and battered items.
- Season dishes during the cooking process to achieve the correct flavour balance and consistency.
- Prepare and modify dishes to meet special dietary requests such as gluten-free, mild spice, vegetarian or allergen-free options.
- Estimate daily ingredient quantities based on takeaway and delivery orders to minimise waste and shortages.
- Instruct and support kitchen hands and new staff on preparation methods, cooking procedures and hygiene standards.

Applicants must meet the following minimum requirements to be considered for the role:

- AQF Certificate IV
- Minimum of 1 year of relevant experience

Skills/Characteristics Required:

Strong food preparation and cooking skills, with the ability to produce high-quality dishes consistently.

- Sound knowledge of food safety, hygiene, and safe food handling practices.
- Excellent time management skills and the ability to work efficiently under pressure in a fast-paced kitchen.
- Solid teamwork and communication skills to collaborate effectively with kitchen and front-of-house staff.
- Good organisational skills, with the ability to prioritise tasks and maintain a clean, efficient workstation.
- Attention to detail and a commitment to maintaining high standards of food quality and presentation.
- Reliable, adaptable, and committed to delivering excellent customer satisfaction.
