Job Title: Commercial Cook (Turkish Cuisine Specialist)

About Us:

Antep Mangal is a premier Turkish restaurant in Perth, known for introducing authentic Turkish charcoal-grilled cuisine to the local community. We pride ourselves on traditional techniques, including Charcoal Shish Kebab (Adana, Chicken Shish, Lamb Shish), Pide, Gozleme, and Yaprak Doner. We operate two busy locations in Victoria Park and Mount Lawley.

Key Responsibilities:

- Prepare, season, and cook authentic Turkish dishes including charcoal-grilled meats (Shish kebabs), Pide, Gozleme, and traditional dips/meze as well as Turkish bakery products such as Turkish bread and Lahmacun.
- Manage the charcoal grill (mangal) station to ensure proper cooking times and authentic flavor profiles.
- Prepare Yaprak Doner, including marinating and stacking meat according to traditional recipes.
- Maintain kitchen hygiene, cleanliness, and food safety standards (HACCP) at all times.
- Assist in menu development, inventory management, and kitchen stock control.
- Supervise junior kitchen staff during peak periods to ensure smooth operations.




- Ensure adherence to all restaurant policies and workplace health and safety (WHS) regulations.

Skills and Experience:

- Proven experience as a Commercial Cook in a high-volume restaurant, specifically with Turkish cuisine.
- Extensive knowledge of charcoal grilling techniques and Mediterranean/Turkish cooking methods.
- Ability to work in a fast-paced environment and handle high-volume orders during peak trading hours.
- Strong understanding of food safety and hygiene protocols.
- Reliable, qualified, and able to work flexible hours (including evenings and weekends).
- Certificate III or IV in Commercial Cookery (or relevant equivalent experience).
