Jonsson’s Farm Market is seeking an experienced and trade-qualified Butcher to join our established butchery team in Stratford.

Established by fourth-generation farmers from the Atherton Tablelands, the business was created as an alternative to the major supermarket chains and to build a stronger connection between local producers and customers. About the role

As a Qualified Butcher, you will prepare, cut and present meat products to a consistently high standard while providing friendly and knowledgeable service to our customers. You will also contribute to the commercial performance of the butchery by maintaining accurate pricing, monitoring product yields and supporting gross profit targets.

Your responsibilities will include

- Cutting, trimming, boning, rolling, portioning and preparing meat

- Preparing sausages, marinades and other value-added products

- Preparing special cuts and customer orders

- Weighing, packaging, labelling and pricing products accurately

- Maintaining fresh, attractive and well-stocked display counters

- Providing customers with advice about cuts, quantities, preparation and cooking

- Monitoring product quality, freshness, temperatures and use-by dates





- Rotating stock and minimising waste through accurate cutting and portioning

- Receiving and checking deliveries and assisting with stock control

- Safely operating and cleaning knives, bandsaws, mincers, slicers and other equipment

- Maintaining clean and hygienic work areas in accordance with food safety requirements

- Working cooperatively with the broader Jonsson’s team to provide a positive customer experience

- Monitor product costs, yields, retail pricing and gross profit margins using Price Control and GP Controller systems

- Adjust pricing and product information accurately to support sales, margin and waste targets

About you To be successful in this role, you will have:

- Certificate III in Meat Processing (Retail Butcher), or an equivalent recognised trade qualification

- Previous experience working as a qualified butcher, preferably in a retail environment

- Strong cutting, boning, portioning and meat preparation skills

- Sound knowledge of meat products, food safety, hygiene and temperature control

- Experience using Price Control and GP Controller systems, with a sound understanding of product costing, retail pricing, yields and gross profit margins
- A strong focus on quality, presentation, yield and reducing waste

- Friendly and confident customer service skills
- The ability to work efficiently both independently and as part of a team
- A reliable, organised and positive approach to your work

- Availability to work early mornings, weekends and public holidays as rostered
