Responsibilities
- Plan and develop menus featuring traditional and contemporary Indian dishes.
- Prepare and cook curries, tandoori dishes, biryani and street-style favourites.
- Estimate food requirements, labour costs and appropriate kitchen supply levels.
- Order ingredients and maintain reliable relationships with approved food suppliers.
- Monitor dish quality throughout preparation, cooking, plating and presentation stages.
- Maintain authentic flavours, consistent portions and established recipe standards.
- Prepare vegetarian dishes, traditional breads, sauces, marinades and accompaniments.
- Operate tandoor ovens and other commercial kitchen equipment safely and efficiently.
- Discuss preparation requirements with management, kitchen staff and service employees.
- Demonstrate cooking techniques and provide guidance on established kitchen procedures.
- Enforce food safety, hygiene, cleaning and protected storage requirements.
- Monitor stock rotation, minimise food wastage and maintain suitable inventory levels.
- Assist with selecting, training and supervising kitchen employees when required.
- Coordinate meal preparation to support dine-in, takeaway and online orders.
- Maintain an organised kitchen during busy services and changing customer demand.
Qualifications
- Diploma/Advanced Diploma in Hospitality Management, or a closely related culinary discipline.
- At least three years of relevant chef experience may substitute for the required formal qualification.
- Demonstrated experience preparing authentic Indian curries, tandoori dishes, biryani, breads and vegetarian meals.
- Strong knowledge of Indian spices, marinades, cooking techniques, flavour profiles and traditional recipe preparation.
- Proven ability to maintain consistent food quality, presentation, portion control and service efficiency.
- Sound knowledge of food safety, hygiene, allergen management, storage and commercial kitchen compliance requirements.
- Ability to plan menus, estimate costs, order supplies and minimise food wastage effectively.
