The Semaphore Hotel is looking for an experienced Sous Chef to join our kitchen team. This is a hands‑on leadership role, working alongside our Head Chef to deliver consistent, high‑quality food across our Bistro, Café, and Sports Bar offerings.

The Semaphore Hotel is a busy, well‑established venue with a strong local following. Our kitchen turns over a high volume of covers across multiple dining areas, so we’re after someone who thrives on pace, consistency, and leading a team through service.
The Role
- Support the Head Chef in day‑to‑day kitchen operations and service
- Lead and mentor kitchen staff, maintaining high standards across all sections
- Manage food costing, ordering, and stock control to support GP targets
- Ensure compliance with food safety, hygiene, and WHS standards
- Assist with menu development and specials
- Step up to run service in the Head Chef's absence
- Maintain a clean, organised, and effective kitchen environment
What We're Looking For
- Proven experience as a Sous Chef or senior line cook ready to step up
- Trade qualification (Certificate III in Commercial Cookery or equivalent)
- Strong leadership and communication skills
- Solid understanding of food costing and GP management
- Current Food Safety Supervisor certificate (or willingness to obtain)
- Ability to work weekends, evenings, and public holidays as required
- A genuine passion for hospitality and delivering great food
