JZZEE PTY LTD T/A Khan Curry Hut Address: 97/99 Ryrie St, Geelong VIC 3220 Position: Full Time Chef Salary: $85,000 plus Superannuation Khan Curry Hut is seeking an experienced and passionate Full Time Chef to join our busy and growing team in Geelong.

Key Duties and Responsibilities
- Prepare, cook, and present a wide variety of authentic Indian, Pakistani, and Nepalese curries, ensuring traditional recipes, flavours and cooking techniques are maintained.
- Specialise in the preparation of regional curry dishes, including butter chicken, chicken tikka masala, rogan josh, karahi, korma, vindaloo, madras, jalfrezi, biryani, nihari, haleem, saag, dal, momo curry, goat curry, and other traditional specialties.
- Prepare, cook, and present a variety of authentic tandoori dishes, including naan bread, kebabs, tikka, seekh kebabs, and other traditional Indian specialties.
- Prepare and blend traditional spice mixes (masalas), marinades, curry bases, and sauces using authentic ingredients and cooking methods.
- Regulate temperatures of tandoor ovens, stoves, grills, ovens, and other cooking equipment to achieve consistent cooking quality.
- Develop, plan, and update menus by introducing new regional Indian, Pakistani, and Nepalese dishes, seasonal specials, and chef's recommendations.
- Standardise recipes and portion sizes to ensure consistency in taste, presentation, and food cost control.
- Estimate food and labour costs and assist in managing kitchen budgets and operational expenses.
- Monitor the quality of food throughout preparation, cooking, and presentation to ensure high standards are consistently maintained.
- Ensure curries, gravies, sauces, and accompaniments are prepared fresh daily and meet established quality standards.
- Supervise, train, and coordinate kitchen staff in authentic curry preparation techniques, food presentation, and protected kitchen practices.
- Delegate kitchen tasks effectively to ensure smooth and efficient operations during busy service periods.
- Maintain high standards of food safety, hygiene, sanitation, and workplace health and safety (WHS/OH&S;) compliance.
- Inspect raw ingredients for freshness and quality before preparation and reject substandard products.
- Manage stock levels, order supplies, monitor inventory, and liaise with suppliers to ensure the availability of quality spices, meats, vegetables, and specialty ingredients.
- Minimise food waste through effective stock rotation, portion control, and inventory management.
- Collaborate with restaurant management on menu planning, food costing, pricing strategies, and kitchen operations.
- Cater for customer dietary requirements and preferences,
including vegetarian, vegan, halal, gluten-free, and mild or extra-spicy curry options where appropriate.
- Plate and garnish dishes to ensure they meet the restaurant's presentation standards before service.
- Maintain a clean, organised, and efficient kitchen, ensuring proper storage, handling, and labelling of food in accordance with food safety regulations.
- Monitor customer feedback and make improvements to recipes and menu offerings to enhance customer satisfaction.
- Assist in developing and implementing standard operating procedures to improve kitchen productivity and maintain consistent food quality.
Qualification and Experience
- Possess excellent relevant post-secondary hospitality (cooking) qualifications, to at least Diploma level.
- Have at least three years of professional experience or more preferred in tandoor.
- Are available across the working week including weekends and Public Holidays.
- Strong knowledge of Indian cuisine, cooking techniques, and kitchen management.
- Offer proven ability to prioritise, set goals and have the determination to achieve them.
- Possess a thorough understanding of food safety and HACCP.
- Understand cost control, time management, prioritization, and cost-efficient procurement practices.
- Cooking tandoor dishes skills is an advantage.
- Passion for food and commitment to high standards of quality and hygiene.
- Strict compliance towards food safety.
