We are a well-established local pub in South Melbourne. Our bistro is famous for honest, high-quality pub classics loved by our loyal regular customers as a country pub in the city.

We are stepping into our next chapter: preserving the bistro favorites our long-time guests adore while introducing a public bar menu to attract a fresh, younger crowd.

The Role

We are seeking an experienced, hands-on Head Chef to captain our existing kitchen team.

You’ll be inheriting a capable, well-oiled crew that knows our operations inside out. We don’t want to tear up the team if we don’t have too—we want a robust leader who can maintain the consistency of our bistro staples, refine dish presentation, create a special board and introduce a public bar menu. Menu Evolution:



Protect and elevate core bistro classics while developing a specials menu and a specials menu and function menus.

Kitchen Management: Oversee COGS, stock control, supplier negotiation, food safety (HACCP), and productive rostering.

What We’re Looking For

Proven Track Record: Experience as a Head Chef or ambitious Senior Sous Chef in a busy pub, tavern, or bistro environment.

Strong Leadership: A calm, respected, and clear communicator who leads by example on the line.

Business Acumen: Solid understanding of GP margins, food cost control, and waste reduction.
