Delmonte is a new Italian restaurant and wine room opening within the King & Godfree building, on the corner of Lygon and Faraday Street, in the heart of Carlton.

Part of a broader precinct alongside Garfield Pizzeria, Johnny’s Green Room and Pidapipo, Delmonte will operate as a wine-led neighbourhood restaurant, focused on seasonal food and consistent execution.

We are building a professional kitchen team across all levels. This is a structured workplace where quality, organisation and efficiency are key, supported by solid leadership and clear standards. The kitchen is centred around wood fire, grill and classic techniques.

Delmonte is designed for repeat trade and consistent service - requiring a kitchen that can deliver at pace, every day.

THE ROLE

You will be responsible for being part of the brigade, and maintaining standards worthy of the building's history — and its next era.

Develop and elevate a full kitchen brigade
Deliver dishes with precision, seasonality and purpose
Drive culture — discipline, teamwork, momentum, pride
Contribute to ordering, supplier relationships & stock integrity




Collaborate with two other venues on site for alignment + efficiency
Be focused on training, growth pathways and skill development
Set the tone — calm, structured, confident
Deliver consistency nightly, not occasionally
