Each bowl is made to order, with freshly pulled noodles, slow-cooked beef broth, and carefully balanced spices.

Position Available: AEOZ Group Pty Ltd (Legend Lanzhou Beef Noodles) is seeking dedicated FULL-TIME Cooks (Ethnic Cuisine) to join our team.
Reporting to the Chef, you will be responsible for preparing authentic Lanzhou-style noodle dishes and broths using traditional techniques, ensuring ingredient quality and food safety, managing kitchen operations, and guiding junior staff—all while maintaining a clean, efficient back-of-house to deliver a memorable dining experience for every guest.
Responsibilities: 1.



Inspect and select fresh beef, bones, chicken, vegetables, and other ingredients to ensure quality and authenticity.
2. Monitor and control temperatures of stockpots, wok burners, noodle boilers, grills, and refrigeration units.
3. Prepare and cook traditional Lanzhou dishes using authentic methods, including hand-pulled noodle making, beef broth simmering (up to 2+ hours), and stir-frying.
4. Season and flavour food correctly using traditional Chinese spices, chilli oil, and broths to achieve the presentation of Lanzhou noodles.
5. Portion, plate, and garnish noodles and dishes according to recipe specifications for dine-in and takeaway.
6. Store all food safely in temperature-controlled facilities to maintain freshness and comply with hygiene standards.
7. Adapt meals to meet special dietary requests (e.g., gluten-free, allergy adjustments) where possible.
8. Plan daily specials and estimate ingredient quantities based on customer flow to minimise waste.
9. Train and guide junior kitchen staff and apprentices in Lanzhou noodle-making, broth preparation, and traditional cooking techniques Requirements: 1. A relevant AQF Certificate III qualification or equivalent, plus one year of relevant work experience.
2. Solid attention to detail and a passion for authentic cooking.
