About Us
Located within the iconicCairns Aquarium, our restaurant welcomes thousands of local, interstate and international guests each year.
Alongside operating a busy à la carte restaurant, we also manage tour groups, conferences, private functions, cocktail events, corporate catering and Aquarium events.
This is a fast-paced operation where no two shifts are the same.
Success in this role requires someone who can confidently manage multiple services and events simultaneously while maintaining exceptional service standards and a calm, professional approach.
The Role
Working alongside the Restaurant Manager, you'll be responsible for leading day-to-day front of house operations while ensuring every guest receives an outstanding experience.
Customer experience is at the centre of everything we do.
We're looking for a leader who is visible on the floor, proactively engages with guests, supports the team during busy services and confidently resolves customer concerns with professionalism and empathy.
Equally important is your ability to build an engaged, high-performing team.
You'll coach, mentor and develop staff, conduct regular observations and evaluations,



and create a positive culture where accountability, teamwork and exceptional service are simply the standard.

You'll be expected to lead by example, coach your team on company procedures and continuously reinforce our operational standards.
Key Responsibilities
Lead busy lunch and dinner services while maintaining exceptional customer service standards.
Supervise, motivate and develop a large, diverse front of house team.
Deliver exceptional guest experiences and professionally resolve customer concerns.
Lead staff training, inductions, coaching and performance evaluations.
Assist with recruitment, onboarding and succession planning.
Prepare and manage rosters while maintaining labour budgets.
Manage ordering, stock control, stocktakes and inventory.
Oversee all bar operations, including beverage stock, stock rotation, wastage control and service standards.
Coordinate multiple restaurant services, tour groups, conferences, catering functions and private events simultaneously.
Liaise effectively with the kitchen, Aquarium operations and event coordinators to ensure seamless service delivery.
Maintain exceptional food safety, liquor licensing and workplace health and safety standards.
Oversee equipment maintenance schedules and ensure maintenance issues are reported and followed up promptly.
Manage daily,



weekly and monthly cleaning schedules to ensure the venue is always presented to the highest standard.
Ensure all company procedures, checklists and operational standards are consistently followed.
Support the Restaurant Manager in driving performance, accountability and continuous improvement across the business.
About You
You'll bring:
A minimum of3 years' experiencein a hospitality management or supervisory role (4+ years highly regarded).
Proven experience leading large, diverse teams in a busy, high-volume restaurant.
Experience managing functions, catering or multiple services simultaneously.
Exceptional leadership, communication and organisational skills.
Outstanding customer service and complaint resolution abilities.
Experience with rostering, labour management, ordering and stock control.
Strong knowledge of food safety, liquor licensing and workplace health and safety.
Hospitality qualifications (Certificate IV, Diploma or higher) are highly regarded.
The confidence to make sound decisions under pressure and lead by example.
